Meinou Corstens
is an Assistant Professor in the Food Process Engineering group at Wageningen University & Research (the Netherlands). Her research combines food science, digestion physiology, and metabolic health to understand how food and microcapsule structures shape digestive processes, nutrient bioaccessibility, and metabolic signalling. Through this work, she aims to establish structure-based design principles for foods that promote satiety and healthier eating behaviours. She currently coordinates the EIC Pathfinder project iNSIGHT on advanced probiotic encapsulation and leads an NWO Veni project exploring how food structure can be leveraged to maximize fullness per kcal. This research contributes to the development of next-generation foods that actively support health beyond their nutritional composition.
